Adjusting the pump pressure is really easy. It just looks more than it is.
All you need to do is remove the drip tray and remove the front panel. You now have full access to the pump adjustment.
All you need to do is loosen the nut on the adjustment screw (hold the screw in place, to prevent it from moving to keep your initial position) and adjust the pressure by turning the screw in or out. There is nothing to be intimidated about really.
Remember that with a closed P/F you will measure peak static pressure which will be higher than the shot pressure.

Does it go up to 3 bar quickly and then shut off or it is going ~25 seconds and only getting up to 3 bars before shut-off? If it's the former, then the problem is more likely that you inadvertently reprogrammed the volumetric dosing to a very small value.

I'd reset the volumetric dosing to see if that fixes things before you tweak the pressure adjustment.

On a plumbed S1 it is not unusual for the street pressure to be 3 bar coming into the machine. Since the pump provides a pressure boost up from 3 bar to 9 bar, are you sure the pump is even coming on?

Also, does the pressure come up quickly to 3 bar and then the 3-way immediately dumps or is the pressure holding at 3 bar for the full ~25s and then opening the 3-way?
